Recipe Substitutions

These are commonly used recipe substitutions. For that “just in case” when you thought you had all the ingredients only to find out, you don’t.

4 ounces cheese = 1 cup shredded
1 cup buttermilk = 1 cup yogurt
1 cup milk = 1/2 cup evaporated milk + 1/2 cup water
1 cup sour milk = 1 cup milk + 1 tablespoon lemon juice or vinegar
1 cup cake flour = 1 cup all-purpose less 2 tablespoons
1 tsp baking powder = 1/4 teaspoon baking soda + 1/2 teaspoon cream of tartar
1 cup sugar = 1 cup honey (use 1/2 cup less liquid in recipe)
1 cup brown sugar = 1 cup granulated sugar
1 cup oil = 1/2 pound butter
1 tsp double acting baking powder = 1/4 tsp baking soda + 1/2 cup buttermilk
1 tsp double acting baking powder = 1/4 tsp baking soda + 1/2 tsp cream of tartar
1 cup butter = 1 cup margarine
1 cup butter = 7/8 cup lard + 1/2 tsp salt
1 cup buttermilk = 1 tbsp vinegar + sweet milk to make 1 cup
1 cup buttermilk = 2/3 cup plain yogurt + 1/3 cup sweet milk
1 oz chocolate = 3 tbsp cocoa + 1 tbsp shortening
1 tbsp corn starch (for thickening) = 2 tbsp flour
1 cup cream = 1/2 cup butter + 3/4 cup milk
1 whole egg = 2 egg yolks
1 cup all purpose flour = 1 cup + 2 tbsp cake flour
1 cup cake flour = 7/8 cup all purpose flour
1 cup self-rising flour = 1 cup flour (omit baking powder and salt)
1 small clove garlic = 1/8 tsp garlic powder
1 tbsp fresh herbs = 1 tsp dried
1 cup honey = 1 1/4 cups sugar + 1/4 cup liquid
1 cup whole milk = 1 cup reconstituted dry milk + 2 tsp butter
1 cup whole milk = 1/2 cup evaporated milk + 1/2 cup water
1 cup sour milk = 1 tbsp lemon juice or vinegar + sweet milk to make 1 cup
1 tbsp minced onion (rehydrated) = 1 small fresh onion
1 cup molasses = 1 cup honey
1 tbsp prepared mustard = 1 tsp dry mustard
1 cup ricotta cheese = 1 cup cottage cheese + 1 tbsp skim milk
1 cup sour cream = 1 cup yogurt
1 cup brown sugar = 3/4 cup granulated sugar + 1/4 cup molasses
1 1/3 cups powdered sugar = 1 cup granulated sugar
1 cup yogurt = 1 cup buttermilk
1 egg = 1 TBSP egg powder and 2 TBSP water

Self-rising flour = Sift together
2 c. sifted cake flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

  1. Where is the substitution for Self rising flour?? When recipe calls for self rising flour.
